Vitellone Bianco del’Appennino Centrale is an excellent selection that embodies history and quality in its fibres. These cattle, aged between 12 and 24 months, come from the renowned Chianina, Marchigiana and Romagnola breeds, which have been bred for over 1500 years in the central mountainous areas of Italy. Their meat, extremely lean and with a favourable fatty acid composition, reflects the diet based on local fodder and feed, enriched by the aromatic essences of the Apennine meadows.
